Tasty Tuesday

Ok...so I am a little un-prepared this week. We haven't made any specific recipes for dinners..and last night we just had salads.  Although, Sunday...I did make these delciously, addicting, and amazing scotcharoos!  They are one of mine and Kevin's favorite treats.  Please don't judge that I have ate half of the pan in 2 days.  You would eat them too...admit it!




1 c. corn syrup
1 c. peanut butter
1 (6 oz.) pkg. chocolate chips
1 c. sugar
6 c. Rice Krispies
1 (6 oz.) pkg. butterscotch chips

In large saucepan, cook corn syrup and sugar over medium heat, stirring frequently, until sugar is almost dissolved.  Remove from heat right before the boiling point and when sugar is almost dissolved. (If you heat the sugar too much, your bars will be really hard and not chewy..so make sure you watch your sugar/syrup mixture while it is heating!) 
Stir in peanut butter. Mix in cereal.

Press in buttered 9x13 pan. Melt over hot (not boiling) water chocolate chips and butterscotch chips, stirring constantly until smooth. ( I am lazy and I use the microwave in 30 second increments, so not to burn the chips)  Spread over cereal mixture. Chill until firm, about 15 minutes.

I use a whole 11oz bag of chocolate and butterscotch chips.  You can never have too much chocolate topping!

Blake and I super duper love scotcharoos!!! We will eat the whole pan in pretty much two days. That's just the way it goes with scotcharoos!!!!
