Tasty Tuesday

I have my friend Kari from Bemidji to thank for this recipe.  Kevin and I both LOVE this dish and it is so easy thanks to McCormick One Dish Spice packets!!  It's so convenient to not have a sink full of dishes, a counter full of clutter etc.  You can have this prepared in about 10 min and dinner on the table in less than an hour.  I hope you all enjoy! 
Salsa Chicken and Rice




Prep Time: 10 minutes


Cook Time: 50 minutes


All You Need

1 pkg. McCormick® Salsa Seasoning Mix
1 ½ cups uncooked regular long-grain white rice
1 can (14 ½ oz.) diced tomatoes
1 can (8 ¾ oz.) whole kernel corn, drained
1 ½ lbs. boneless skinless chicken breast halves
2 ½ cups water
1 cup shredded Cheddar cheese


PREHEAT oven to 375º F. Place rice, tomatoes and corn in 13x9x2-inch baking dish. Top with chicken.

MIX water and Seasoning Mix until well blended. Pour over chicken and rice. Cover with foil.

BAKE 45 min. or until chicken is cooked through and rice is tender. Remove foil. Sprinkle with cheese. Bake 5 min. longer or until cheese is melted. Cut chicken into serving-size pieces. Stir rice before serving.
